It’s Time to Grill

To me, summer means many things but one of my favorites is taking the cooking outdoors! Nothing could be finer than a fresh piece of fish, burgers and steaks or farm fresh veggies on the grill.

Finally, I leave you with a scrumptious and healthy BBQ recipe from the sublime Tree Restaurant at The Lodge at Woodloch. So pour a glass of white wine, fire up the grill and enjoy!

Grilled Mahi Mahi with Garden Herb Chimichurri

Ingredients for Mahi Mahi (two servings)
2 mahi mahi fillets
3 tablespoons lemon juice
salt and pepper, to taste

Ingredients for Chimichurri Sauce (makes about 1/2 cup)
1/2 cup of parsley, large stems removed
4 cloves garlic
1/2 cup cilantro
1/4 cup oregano
1 teaspoon crushed red pepper
salt and pepper, to taste
1/3 cup olive oil

In a blender or food processor combine all ingredients for chimichurri. Puree until finely blended.

Pour lemon juice over fillets and season with salt and pepper. Grill fillets for 10- 15 minutes, or until fish is pearly white and flakes easily with a fork.

Remove and top with chimichurri sauce.
