				<content:encoded><![CDATA[<p>To me, summer means many things but one of my favorites is taking the cooking outdoors! Nothing could be finer than a fresh piece of fish, burgers and steaks or farm fresh veggies on the grill.</p>

<p>Finally, I leave you with a scrumptious and healthy BBQ recipe from the sublime <strong>Tree Restaurant</strong> at <strong>The Lodge at Woodloch</strong>. So pour a glass of white wine, fire up the grill and enjoy!</p>
<p><strong>Grilled Mahi Mahi with Garden Herb Chimichurri</strong></p>
<p>Ingredients for Mahi Mahi (two servings)<br />
2 mahi mahi fillets<br />
3 tablespoons lemon juice<br />
salt and pepper, to taste</p>
<p>Ingredients for Chimichurri Sauce (makes about 1/2 cup)<br />
1/2 cup of parsley, large stems removed<br />
4 cloves garlic<br />
1/2 cup cilantro<br />
1/4 cup oregano<br />
1 teaspoon crushed red pepper<br />
salt and pepper, to taste<br />
1/3 cup olive oil</p>
<p>In a blender or food processor combine all ingredients for chimichurri. Puree until finely blended.</p>
<p>Pour lemon juice over fillets and season with salt and pepper. Grill fillets for 10- 15 minutes, or until fish is pearly white and flakes easily with a fork.</p>
<p>Remove and top with chimichurri sauce.</p>
